
I don’t know if it’s the warmer weather here in Texas, but lately I’ve been all about quick and easy meals.
I’ve never been a fan of quinoa until this year. I disliked the texture and thought it was bland.
Once I started cooking it with vegetable broth I seem to enjoy it better. Since going plant based it’s another great way to add protein.
The meal below took about 30 minutes.
I cooked the organic quinoa according to package directions but used broth instead of water. I normally would add in fresh herbs at the end but I didn’t have any on hand.
While the quinoa was cooking I cooked the kale.
I added some vegetable broth to a pot and stuffed it to capacity with organic kale. I added bell pepper, onion and garlic and seasoned with a dash of smoked salt, onion and garlic powder along with Trader Joe’s 21 seasoning salute. I also used a dash of Bragg liquid aminos. (I over season everything I eat)
I simmered the kale on med for about 30 minutes.
The black beans were canned and organic. I rinsed throughly with cold water. I added a splash of avocado oil to a pan and sautéed garlic, bell pepper and onion. I added cumin, chili powder, onion, garlic, powder and pink Himalayan salt. I cooked the beans on low for 20 minutes.
When I meal prep I cook large amounts of vegetables. I love to try different ones but Kale is a staple.
If you’re a meat eater just simply add a portion of your protein of choice.
I put the food in glass meal prep containers.
I prepped lunch for 3 days.
This really prepares me for the week. This is one less thing I have to worry about.
