
I wanted to share a simple yet delicious guacamole recipe. It has been a favorite in my household. I’ve been on a kale kick and decided to add some in. This is a great way to get some extra greens into your diet. Avocados are a good source of monounsaturated fatty acids. They contain a good source of energy and essential vitamins and minerals.
Ingredients
1/2 cup diced red onion
1/2 cup diced red bell pepper
1/2 cup diced yellow bell pepper
1 roma tomato chopped
1-2 leaves of red kale thinly sliced
1 ripe avocado halved and pitted
1 tablespoon fresh cilantro cilantro
1 tablespoon lime juice
1/2 jalapeno minced
dash of salt
dash of pepper
Instructions
1 Place avocados in a bowl and mash with a fork.
2 Mix in other ingredients
Depending on the amount you will need to adjust the ingredients.You can’t go wrong with this either way.
Serve immediately with you favorite chips.
